Pumpkin Cobbler



Makes 15 servings

Ingredients
3 eggs, beaten
15 ounces pumpkin
12 ounces evaporated milk
1 cup sugar
1/8 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1 tablespoon vanilla extract
18 1/4 ounces yellow cake mix
1 1/4 cups margarine, melted
1 cup chopped nuts

Preparation
1. Mix the first eight ingredients together, pour into an ungreased 13"X9" baking pan. Sprinkle cake mix over the top; drizzle with margarine.
2. Bake at 350 degrees for 25 minutes; top with nuts.
3. Bake for an additional 15 minutes.

Nutritional: 446 calories, 26.6g fat, 1.5g fiber
